The key steps to operating your pit can be quickly distilled into the following four points:

 

1. Use appropriately sized hardwood splits with a low moisture content as your fuel source.

​

2. Adjust the airflow as needed to maintain the desired cooking temperature and smoke quality.

​

3. Add new splits of wood to the fire when temperatures start to drop.

​

4. Use a temperature probe or instant-read thermometer to check the internal temperature of the food to determine when it is fully cooked.
