OPERATING YOUR PIT

FIREBOX GRILL

Terraton 200 Offset Smoker - Macro image

The Terraton 200 has the convenient feature of an openable insulated lid for the firebox, which allows the user to cook directly over a live fire. This feature gives users the option to both smoke food slowly, or grill/reverse sear items quickly on the stainless steel grill grates. When not used as an additional heat shield for the top lid, the 8mm thick steel plancha can be used to cook items like sliced vegetables and smash burgers.

The firebox has four height positions for the grill grates and plancha, allowing the user to move them closer or further away from the fire management basket depending on the desired level of heat. The heavy-duty plancha also allows the user to build a fire directly on it in the lower firebox position, giving the user another option for how they cook using the grill grates placed above. For optimal performance in direct-heat mode, we recommend using charcoal in the Materia fire management basket and adding smaller splits for a burst of flame and additional heat if needed. Additionally, after running the pit in offset mode you can re-purpose the same fire for grilling and searing.

Our Fractal range also has an option for a slide in firebox grill grate, to be used in a similar fashion as outlined above.

When using our pits in offset smoking mode we would strongly recommend not leaving the grill grates in the firebox to ensure optimal airflow and reduce the chance of them warping. A dedicated shelf underneath the cooking chamber is provided for storing the grill grates when not in use.
